The coffee project in the village of Gaitania, led by coffee grower Emmanuel Enciso, is a remarkable story of passion and community development. Emmanuel's upbringing in a coffee-growing family provided the foundation for his dedication to coffee. In 2006, he expanded his knowledge about coffee processes and quality, focusing on producing specialty coffees within his micro-region. However, like many other coffee growers, he faced challenges due to the lack of a central processing center for quality control. In response, in 2016, Emmanuel and his family embarked on creating a coffee processing center that now serves as a vital link between more than 15 villages in Gaitania, processing coffee from various local growers. This particular coffee is a blend of Caturra and Colombia cultivars, sourced from a community of 80 coffee farms around Gaitania. Forest Coffee, who initiated the project with just one farm, now collaborates with over 80 farmers in the region, teaching them the art of growing and processing specialty coffee and ensuring they receive fair compensation, paying 30% above the rates offered by the Colombia federation for top-rated coffees. The meticulous process involves a 24-hour washed fermentation in mucilage, followed by thorough washing, sun drying on a patio, and a stabilization period before dry milling, resulting in exceptional coffee quality.

Farm info

This coffee project is centered in the village of Gaitania where Emmanuel Enciso is a coffee grower raised by coffee growing parents, who taught him everything about coffee. In 200 6 he had the opportunity to learn much more about processes, quality, and varieties; managing to focus his farm and several producers in the micro region on producing specialty coffees. But he had a problem in common with so many other coffee growers, they did not have the capacity to produce large quantities, because they did not have a central coffee processing center for quality processes. That is why in 2016 he began with his family to create a coffee processing center that became a strategic bridge between more than 15 villages in Gaitania and now Emmanuel and his family are processing the coffees of coffee growers throughout the area.

This coffee comes from a community of 80 coffee farms around the village of Gaitania and is a blend of Caturra and Colombia cultivars. It's a project that Forest Coffee started in this region with only one farm and now they are working with over 80 farmers in the region. Forest teaches the farmers how to do grow and process Specialty coffee so they can get out of the commodity market they had sold to for decades, on top of that Forest pays 30% above of what they would get from the Colombia federation for top rated coffees.

The process for this project coffee consists of a short washed fermentation of 24 hours in mucilage and then a laborious washing of the coffee. Afterwards it is taken to the drying patio where all the coffee is dried together in the sun. Afterward, the coffee is stabilized for 20 to 25 days before being dry milled.

    Proportional Pricing

Out of the $400 billion coffee industry, a meager 5% stays where it's grown, leaving farmers with crumbs. At Torque, we're rewriting this injustice. Our radical approach ensures equity for coffee producers, shifting power dynamics.

Here's the game-changer: Coffee producers were pre-paid a guaranteed 20% upfront based on the retail price of their coffee. Simple. Transparent. Fair. We call it Proportional Pricing©. Pay more, they earn more. This reshapes the value equation.

No more opaque systems. No more exploitation. We start with the value you see on the shelf, ensuring 20% flows back to the hands that cultivate your cup. It's called Proportional Pricing©, a seismic shift in coffee's worth chain. It's farmer equity, pure and simple.

We're breaking norms, building a fairer future. Torque Coffees reverse-engineered the chain, advocating for a balanced, equitable industry. It's time to empower those who make your coffee. Together, let's dismantle inequality in the coffee world.
